While sitting on a chair, clutch your knees with your hands thightly. Then feel the breath. Send all this breath into the knees. Breath calmly like this for a while.

It's not strictly buddhist but I have another tip. I came across this idea while researching public speaking techniques which, for many people, is another nerve racking activity.
All you do when you find yourself getting nervous is to look around you and name inanimate objects eg ceiling, floor, carpet etc for a couple of minutes. It seems to ground you back to the present moment rather than getting carried away with your thoughts. You can then focus on the task at hand. I've found it really effective.
