1) Does anyone know about any Chan/Zen monasteries/centers in Hong Kong?

2) How about residential opportunities/retreats?

Try corresponding with The Hong Kong Buddhist Association should you seek to venture beyond the above ones and the respective organisations for their retreat schedules as I have no idea beyond their existence in Hong Kong other than me as a tourist to HK back in 2011. Also try posting on ZFI for better luck

Plum Village also has a place in HK.
They, and the Korean Kwan Um are some of the few that do much in English, though.
Though the FGS centers have monastics that are English fluent.
(A couple of Tibetan centers in HK also do stuff in English, however.)

You could also inquire at HKU, Centre of Buddhist studies. <http://www.buddhism.hku.hk/>
Maybe ask if Ven. Prof. Hin Hung is doing anything.
The Centre, like the whole of HKU, operates in English.
