Yup. But it is still Italian. It is not an American invention, just a variation on a theme. Like that god-awful mac and cheese is a variation on Italian pasta. One could argue that pasta is just a variation on noodles, given Marco Polo brought the idea back from China to Italy...

Funnily enough, pizza has it's origins in Ancient Greece.

The article doesn't prove poverty as the cause, but is correlated. A pediatrician I know works with poor communities in the Bronx. Half of her job is educating on better dietary habits. The relation between being poor and ignorant is complicated. I appreciate your culturally conditioned perspective, though.

Ah. Right. Poverty is an effect of greed, a factor in decadence. Simplified, its some people hoarding resources.

My point stands, though. Part of obesity is the predilection for salty, fatty, sweet food. Used to be rich people were fat because they could. Now anyone can be fat. It's a tendency.
There's also the fact that we are disposed to eat fatty, greasy, sugary foods.
We're also disposed to being health and living meaningful lives, and we can choose to live this way.
Indeed. But good intensions often get undermined by basic drives. It's why pretty much every religion codifies good behavior. If the inclination to being healthy and having a meaningful life was overriding, there'd be no needs for rules and the hospitals would not be full of people who made bad choices their whole lives.

Believe it not, but they did a test of bagels, using exact same production methods in NYC and in SF. The NYC bagels still tasted better. In the end, it was decided that the difference was the water used in the process.

That still doesn't explain the pizza. Honestly, the pizza and bagels and the whole baking and diner culture in general is the only thing I really miss about New York.

Re Pizza - As Malcolm wrote it's the water. If you leave the NYC watershed, the pizza and bagels are not the same. For instance Delaware Water Gap - lots of NYC refugees who make pizza the same way but something is missing. Western NY also.

Also read a story about a guy who moved to FL - some parts are like NY South. He brings water down from NY to make his pizza dough.
