How can you become a Monk?

While I don't believe a monastery will allow me in because of my mental illness.. I'm still curious what steps does one has to take to become a monk. Do they regulate what you learn or can you study at your own discretion?

I was looking at one site and it says you need to be between the ages of 17 and 35 to be able to get monastic training. I'm 44 I have no chance to learn in this particular school.
