Okay, because when I heard Namkhai Norbu singing the Song of the Vajra and taking the refuge, I became pretty confused over his "Goo-roo-byah" versus the other "Goo-roo-bay" I've heard before.

It's not the Classical Sanskrit pronunciation, but maybe it's a Tibetanized one.

Tibetanised Sanskrit pronunciation can vary greatly because of the variety of Tibetan dialects.

Personally I learned goo-roo-byah, but I've also seen texts where it's written as gurubhye (i.e. goo-roo-byey). I think it has to do with the proper vocative case in Sanskrit.
When I do prostration I use gurubhya out of habit. I'll use gurubhye when I see it in av text.
The vast majority of my lamas are Khampas, and from the Nangchen as Derge areas specifically. Not sure how that affects. Pronunciation in Tibetanized Sanskrit, as noted by Greh

It may be worth pointing the fact that, as far as mantra's pronunciation is concerned, the right pronunciation is that of the guru who transmitted it to you

Three syllables. The ə is a mid-central vowel, or a schwa. Click the ə here.
The "J" is pronounced like the y in "grab your umbrella".
The B is aspirated. Chances are if you are a native English speaker you might already aspirate most of your B's depending on your accent.
Don't round your O (i.e. pronouncing it with a little 'w' at the end, an English habit, if you have it).
Obviously this is a "proscriptive" pronunciation. Sanskrit pronunciation is like Latin pronunciation. Anything goes.
The French pronounce Latin in the French manner, the Polish in the Polish manner, etc.
Then, the monks uttered this gāthā:
These bodies are like foam.
Them being frail, who can rejoice in them?
The Buddha attained the vajra-body.
Still, it becomes inconstant and ruined.
The many Buddhas are vajra-entities.
All are also subject to inconstancy.
Quickly ended, like melting snow --
how could things be different?
The Buddha passed into parinirvāṇa afterward.
